This is a delicate cow's milk cheese which has a white rind, which, when opened, reveals a lovely rich yellow interior. It has an oozing texture leading to a slightly firmer, curdy consistency in the centre

It has a soft, fresh, delicate flavour when young becoming more peppery with age

Her cousin makes the wonderful Barkham Blue and she also makes Wigmore and Spenwood (Ewe's milk cheeses)
