Gjetost

Gjetost, pronounced (yet-oast), was first made around 130 years ago. It is a combination of milk, cream and whey and is made by slowly boiling the milk until the lactose naturally caramelises which produces an unusual brown cheese

It has a sweet caramel flavour & smooth texture similar to fudge, yes, it tastes like cheesy fudge! Quite unique.

This version is made with both goat and cows milk and is slightly sweeter than the pure goat milk version (Ekte)

Best eaten in thin slivers, on toast or very thin flatbreads
