According to Legend this cheese was invented at the beginning of the 16th Century by Cistercian monks, in the heart of Burgandy

A traditional process, Epoisses is first washed with salty water then kept in a humid cellar, then washed again, two to three times a week with a mix of water and the local Marc de Bourgogne's which produces it's famous orange sticky rind

It has a creamy almost liquid texture, with a pungent, lively aroma and powerful flavour
