Made by Chris Duckett at Westcombe Dairy, nr Shepton Mallet.

This is a lightly pressed cheese made by hand using old traditional presses, the curds are piled into cheesecloth lined moulds and pressed briefly before being taken out, salted, pressed overnight then bathed in brine. Then they mature in a cool damp cellar and are ready at around seven weeks.

It's a deliciously moist and crumbly cheese. When young it has a lemony fresh, mild flavour and soft texture and is beautiful eaten on its own. As it matures, stronger flavours develop and it becomes softer. Makes great Welsh rarebit!
