Made by Stephen Fletcher, just outside the village of Berkswell, West Midlands from where the cheese takes its name. They use the milk from their flock of East Friesland Ewe.

This is a distinctive looking cheese with a hard outer rind which is matured for approx 4 months.

The interior is hard, the flavour is delicate and nutty with a slight fruity tang and creamy finish.

Ewe, Vegetarian, Unpasteurised
